Pesare 15 g di uvetta sultanina, 15 g di ribes, 5 g di scorze candite e 3 ciliegine, versare 3 ml di brandy, mescolare e lasciare macerare 30 minuti.

Preparare il marzapane: tritare 22 g di mandorle pelate, unire 15 g di eritritolo, 1 tuorlo, pochi gocce di succo di limone, 1 goccia di acqua di fiori d'arancio e ½ goccia di estratto di vaniglia, impastare compatto e avvolgere in pellicola.

Preriscaldare forno a 170°C, rivestire uno stampo rotondo (Ø 12 cm) con carta forno.

Montare 35 g di yogurt greco 0%, 1 uovo intero, aggiungere grattugiata di scorza di mezzo limone e 15 g di eritritolo, quindi unire 35 g di farina di mandorle, ¼ cucchiaino di cannella, ¼ cucchiaino di zenzero, 1 pizzico di sale, 5 ml di sciroppo d'acacia, mescolare bene.

Versare metà impasto nello stampo, posizionare un disco sottile (diametro 10 cm) di marzapane, coprire con impasto rimanente, livellare. Cuocere 18-20 minuti a 170°C fino a doratura. Spennellare con 5 g di confettura di albicocche quando ancora tiepida.
