Preriscaldare il forno a 160°C e rivestire una tortiera da 20 cm con carta da forno.

Tritare finemente le mandorle pelate con i biscotti integrali fino a ottenere un composto sabbioso.

In una ciotola, montare gli albumi con un pizzico di sale fino a ottenere una schiuma ferma e lucida.

In un'altra ciotola, sbattere i tuorli con lo zucchero di cocco e il latte di mandorla fino a ottenere un composto pallido e cremoso.

Aggiungere il trito di mandorle, biscotti e il lievito al composto di tuorli, mescolando delicatamente.

Incorporare gli albumi montati con movimenti dal basso verso l'alto usando una spatola, preservando l'aria.

Versare il composto nella tortiera e cuocere per 32-35 minuti a 160°C fino a quando uno stecchino inserito al centro esce asciutto.
