Method

In un pentolino, sciogliere il burro chiarificato a fuoco lento insieme al latte scremato e all'eritritolo, mescolando bene.

In una ciotola, unire la farina di ceci con un pizzico di sale e pepe, quindi aggiungere il composto umido e impastare fino ad ottenere un impasto liscio. Coprire con pellicola trasparente e far riposare in frigorifero per 15 minuti.

In una padella antiaderente, cuocere gli spinaci a fuoco medio per 3-4 minuti fino a quando sono appassiti. Unire la ricotta e il Parmigiano, mescolando bene e aggiustando di sale.

Stendere l’impasto su un piano infarinato fino a raggiungere uno spessore di circa 3mm. Ricavare dei quadrati di 8x8cm, riempirli con un cucchiaio di ripieno e chiudere a triangolo, sigillando bene i bordi.

Posizionare i tortelli su una teglia rivestita di carta forno, spennellare con il burro fuso e cuocere in forno preriscaldato a 180°C per 15-20 minuti.
