Method

Tritare finemente 150g di zucchine fresche e 30g di tofu affumicato, salare e lasciare riposare 5 minuti. Strizzare bene con un canovaccio per eliminare l'acqua in eccesso.

In una ciotola, sbattere 3 albumi d'uovo con un pizzico di sale fino a ottenere un composto omogeneo.

In una padella antiaderente, scaldare 1 cucchiaio di olio extravergine e aggiungere le zucchine e il tofu, rosolando per 3-4 minuti.

Versare il composto di albumi sulle zucchine e tofu, distribuire 20g di feta sbriciolata e cuocere a fuoco medio-basso per 5-6 minuti, fino a che i bordi iniziano a staccarsi.

Girare la tortilla con l'aiuto di un piatto e cuocere per altri 2-3 minuti.
