Method

Inizia sbucciando le patate dolci e tagliale a cubetti piccoli. Cuocile in acqua bollente salata per circa 10 minuti fino a che non sono tenere. Scolale e mettile da parte.

In una padella antiaderente, scalda l’olio extravergine d’oliva a fuoco medio e aggiungi la cipolla affettata finemente. Cuoci fino a quando diventa trasparente, circa 5 minuti.

Aggiungi gli spinaci freschi e cuoci fino a farli appassire, circa 3 minuti. Unisci le patate dolci cotte e mescola bene per amalgamare i sapori. Aggiungi paprika, sale e pepe a piacere.

In una ciotola, sbatti le uova con la ricotta e il prezzemolo tritato. Versa il composto di uova nella padella con le verdure e cuoci a fuoco medio-basso per circa 5-7 minuti fino a quando i bordi iniziano a rapprendersi.

Trasferisci la padella in forno preriscaldato a 180°C e cuoci per altri 10 minuti, finché non si gonfia e diventa dorata. Verifica la cottura con uno stecchino.

Una volta pronta, lascia intiepidire per qualche minuto, poi taglia a fette e servi.
