In un mortaio, unire la scorza di limone grattugiata con 10 g di eritritolo e pestare fino a ottenere una miscela profumata.

In una ciotola, mescolare la farina di avena, lo yogurt greco, il tuorlo e l'estratto di vaniglia fino a formare un impasto omogeneo; coprire e far riposare in frigorifero per 20 minuti.

Stendere l'impasto tra due fogli di carta forno a uno spessore di circa 4 mm e trasferire in uno stampo tondo da 15 cm; cuocere in forno preriscaldato a 180°C per 15 minuti fino a doratura.

Nel frattempo, preparare la crema: in un pentolino, mescolare il latte di mandorla, l'amido di mais, l'albume e 10 g di eritritolo; cuocere a fuoco basso mescolando continuamente fino a ottenere una consistenza cremosa (circa 5 minuti).

Versare la crema sulla base di frolla raffreddata, decorare con i mirtilli e le fragole, e lasciare riposare in frigorifero per 30 minuti prima di servire.
