Preparare la base: mescolare 25g di farina di mandorle con 8g di olio EVO e 1 albume d'uovo fino a ottenere un impasto sabbioso; pressare sul fondo di uno stampo monoporzione (8cm diametro).

Cuocere la base a 180°C per 8 minuti.

Nel frattempo, montare 1 uovo intero con 40ml di latte scremato, 15ml di sciroppo d'acero puro e 2g di eritritolo fino a ottenere un composto omogeneo.

Versare il ripieno sulla base ancora calda.

Infornare a 180°C per 12-15 minuti fino a quando il ripieno è quasi assodato ma ancora lievemente tremolante al centro.
