Inizia preparando la base: mescola le mandorle macinate con l'eritritolo e l'olio di cocco, poi pressa il composto in uno stampino da crostatina. Cuoci in forno preriscaldato a 170°C per 10 minuti.

Nel frattempo, prepara la crema: in un pentolino, scalda il latte di cocco con lo yogurt greco e l'uovo, aggiungi l'eritritolo e mescola costantemente a fuoco medio per circa 6-7 minuti, fino a ottenere una consistenza cremosa.

Versa la crema sulla base raffreddata e lascia riposare in frigorifero per almeno 1 ora.

Prima di servire, cospargi la superficie con l'eritritolo cristallizzato e caramellalo con una torcia culinaria fino a ottenere un bel colore dorato.
