In una ciotola, mescola la farina di avena con l'eritritolo, il sale e l'acqua fredda fino a ottenere un impasto omogeneo; avvolgi in pellicola e lascia riposare in frigorifero per 10 minuti.

Nel frattempo, trita l'aglio e mescolalo con il tofu sbriciolato, lo yogurt greco, il lievito alimentare, pepe nero e noce moscata; aggiungi gli spinaci freschi lavati e strizzati.

Preriscalda il forno a 180°C; stendi l'impasto in uno stampo rettangolare (18x12cm), bucherellalo con una forchetta e distribuisci le mandorle a lamelle sulla base.

Versa il ripieno di tofu e spinaci sulla base, quindi adagia i pomodorini tagliati a metà in superficie.

Cuoci in forno per 20 minuti fino a doratura; lascia raffreddare per 5 minuti prima di servire.
