Method

Sbuccia la zucca, elimina i semi e taglia la polpa in pezzi uniforme di circa 4-5 cm.

Cuoci la zucca al vapore per 25 minuti fino a renderla molto tenera. In alternativa, cuocila in pentola con un dito d'acqua a fuoco medio per 20 minuti.

Nel frattempo, prepara 6 pirottini in silicone o stampi piccoli: distribuisci mezzo cucchiaino di burro su ciascuno e un velo di pangrattato integrale sulle pareti.

Una volta cotta, trasferisci la zucca in una ciotola e frullala con una forchetta o un mixer a mano fino a ottenere un purè liscio.

In una second ciotola, mescola la ricotta magra con le uova intere, il Parmigiano grattugiato, il sale, il pepe e la noce moscata fino a amalgamare bene.

Combina il purè di zucca al composto di ricotta, mescolando delicatamente con un cucchiaio di legno.

Distribuisci il composto equamente nei pirottini preparati.

Cuoci a bagnomaria in forno preriscaldato a 160°C per 35-40 minuti: sistema i pirottini in una teglia più grande riempita di acqua calda (altezza circa 2 cm) e copri con carta da forno.

I tortini sono pronti quando leggermente gonfi al centro e sodi ai bordi (verifica con uno stuzzicadenti).

Servi tiepidi o a temperatura ambiente; si mantengono in frigorifero per 3 giorni.
