Method

In una ciotola capiente, unisci il roast beef, le cipolle, l'aceto di mele, l'acqua, il sale, il pepe, lo zucchero, i chiodi di garofano e le foglie di alloro. Copri e lascia marinare in frigorifero per 48 ore, girando la carne ogni giorno.

Rimuovi la carne dalla marinata e asciugala con della carta assorbente, conservando la marinata.

In una casseruola capiente, scalda l'olio extravergine d'oliva a fuoco medio. Rosola il roast beef su tutti i lati fino a doratura, circa 10 minuti.

Versa la marinata riservata sulla carne rosolata, copri e riduci il fuoco a medio-basso. Lascia cuocere lentamente per 2-3 ore, fino a quando la carne è tenera.

Una volta cotto, trasferisci il roast beef su un piatto e affettalo.

Filtra i solidi dal liquido di cottura e versa il liquido in una pentola. Aggiungi la farina di riso e mescola bene per addensare, cuocendo a fuoco medio per circa 10 minuti. Servi la salsa calda sopra le fette di manzo.
