Preriscalda il forno a 180°C e rivesti una piccola teglia (20x15 cm) con carta da forno.

Monta l'albume a neve ferma con 5 g di eritritolo fino a ottenere una meringa stabile.

In una ciotola, mescola il tuorlo, la farina di avena, il lievito, i restanti 5 g di eritritolo, lo yogurt greco, l'estratto di vaniglia e il pizzico di sale.
