Preriscalda il forno a 180°C e prepara una piccola teglia antiaderente (15x15 cm).

Monta l'uovo con l'eritritolo fino a ottenere una consistenza spumosa. Aggiungi delicatamente la farina di avena e il lievito. Versa il composto nella teglia e cuoci per 12 minuti. Lascia raffreddare su una griglia.

In una ciotola, mescola lo yogurt greco con 5 g di eritritolo. Dividi il composto in due: in una ciotola aggiungi il cacao amaro.

Tritura finemente il cioccolato fondente e incorporalo nella crema bianca.

Una volta raffreddato, taglia il pan di Spagna in due strati orizzontali. Spalma il primo strato con la crema bianca, sovrapponi il secondo e copri con la crema al cacao. Taglia in un trancetto rettangolare e servi.
