In una ciotola, mescola il kefir, l'eritritolo e il lievito di birra fino a sciogliere quest'ultimo.

Aggiungi la farina di mandorle, le proteine in polvere, l'olio di cocco, l'uovo, la cannella e il sale; mescola fino a ottenere un impasto omogeneo.

Incorpora l'uvetta sultanina e lavora l'impasto su un piano infarinato.

Forma due filoncini lunghi circa 20 cm, intrecciali e unisci le estremità; posizionali su una teglia rivestita di carta forno.

Lascia riposare l'impasto coperto in un luogo caldo per 30 minuti.
