In una padella antiaderente, scaldare l'olio extravergine d'oliva a fuoco medio. Aggiungere il petto di pollo tagliato a cubetti e rosolare per 4-5 minuti fino a doratura.

Unire la cipolla rossa tritata e la carota affettata, cuocendo per 3 minuti mescolando bene.
