Iniziare preparando la granola: in una padella antiaderente, tostare a fuoco medio i fiocchi di avena, i semi di girasole e le mandorle con un filo d'olio evo e, se desiderato, un cucchiaino di miele per circa 5 minuti. Mescolare frequentemente per evitare che brucino.

Pulire il porro e tagliarlo a rondelle. Sbucciare e ridurre la patata a cubetti.

In una casseruola, scaldare l'olio evo e rosolare il porro per 3 minuti. Aggiungere la patata e cuocere per altri 5 minuti.
