Method

In una ciotola, mescola il sale marino, pepe nero, paprika affumicata, aglio in polvere, allspice e senape in polvere. Aggiungi lo zucchero di cocco e mescola bene.

Massaggia il composto sulla carne di cervo, avvolgi bene in pellicola trasparente e lascia riposare in frigorifero per 3 giorni.

Rimuovi la carne dal frigorifero e sciacquala sotto acqua corrente per rimuovere il sale in eccesso.

Immergi la carne in acqua fredda per 1 ora, quindi scolala e asciugala.

Preriscalda il forno a 120°C.

Posiziona la carne in una teglia, condisci con un po' di pepe nero e paprika affumicata.

Cuoci in forno per circa 2 ore o fino a quando la temperatura interna raggiunge i 70°C.
