Method

Preriscalda il forno a 180°C e prepara una teglia rivestita con carta da forno. Affetta finemente le zucchine, il peperone giallo e la cipolla rossa.

In una ciotola, unisci le verdure con l'aceto balsamico, il succo d'arancia, l'olio d'oliva, il timo, il pepe e la paprika, mescolando bene. Disporle sulla teglia in un unico strato e cuocere in forno per 20 minuti.

Nel frattempo, sgocciola e sfilaccia il tofu. Scalda una padella antiaderente e rosola il tofu a fuoco medio per circa 3-4 minuti fino a doratura.

Una volta cotte le verdure, impiatta le verdure croccanti, aggiungi il tofu rosolato e cospargi con i semi di zucca tostati e il prezzemolo fresco tritato.
