Cuoci il riso basmati integrale in acqua salata secondo le istruzioni sulla confezione. Scola e lascia raffreddare.

Nel frattempo, cuoci il petto di pollo in una padella antiaderente con un filo d'olio extravergine d'oliva per circa 8-10 minuti, fino a doratura. Una volta cotto, taglialo a striscioline.

Pela la carota e il cetriolo, poi affettali a julienne.

Immergi un foglio di riso in acqua calda per circa 10 secondi, finché non diventa morbido.

Adagia il foglio di riso su un piano di lavoro pulito e aggiungi al centro una porzione di riso, pollo, carota, lattuga, cetriolo e qualche foglia di menta.

Ripiega i lati del foglio verso l'interno e arrotola dal basso verso l'alto, mantenendo gli ingredienti ben stretti.

Ripeti il processo con gli altri fogli di riso.

Mescola la salsa di soia con l'aceto di riso e servi gli involtini con la salsa a parte per intingere.
