In una casseruola, porta a ebollizione l'acqua insieme all'eritritolo, mescolando fino a scioglierlo completamente. Aggiungi l'acqua di rose, il cardamomo e lo zafferano, quindi riduci il fuoco al minimo per mantenere caldo lo sciroppo.

In un'altra pentola, scalda l'olio di cocco a fuoco basso. Aggiungi la farina di farro e mescola fino a ottenere un composto liscio, circa 1 minuto. Continua a cuocere, mescolando costantemente, finché il composto non diventa dorato, circa 10-15 minuti.

Togli la miscela di farina dal fuoco e incorpora gradualmente lo sciroppo caldo, mescolando fino a quando il liquido non è completamente assorbito e la consistenza è simile a una pasta morbida, almeno 4 minuti.
