In una padella, scalda l'olio extravergine d'oliva a fuoco medio e aggiungi il pepe bianco, la paprika affumicata e il pepe di cayenna. Riscalda le spezie per 2-3 minuti fino a quando non sprigionano il loro aroma.

Aggiungi lo scalogno tritato e cuoci mescolando finché non inizia a diventare traslucido, per circa 3-5 minuti.
