Battete il petto di pollo tra due fogli di pellicola fino a raggiungere uno spessore di circa 4mm.

In una ciotola, mescolate la farina di avena con un pizzico di sale e pepe. In un'altra, sbattete l'uovo con lo yogurt greco e un pizzico di noce moscata. Nella terza ciotola, mettete il pangrattato di quinoa.
