Method

Tritare finemente cipolla e aglio. In una pentola antiaderente scaldare l'olio e far rosolare cipolla e aglio per 2-3 minuti a fuoco medio.

Aggiungere il concentrato di pomodoro e mescolare bene per 1 minuto, permettendo che si tosti leggermente.

Versare l'acqua, aggiungere il dado di brodo vegetale e portare a ebollizione.

Unire le lenticchie rosse, il bulgur integrale, il peperoncino fresco tritato e la metà della menta. Abbassare il fuoco e cuocere a fuoco medio per 30-35 minuti, fino a quando le lenticchie saranno morbide e il bulgur avrà assorbito i liquidi.

Regolare di sale e pepe nero. Finire con succo di limone fresco e la menta rimanente tritata al momento. Servire calda.
