In una casseruola, scaldare l'olio extravergine di oliva a fuoco medio e aggiungere la cipolla, la carota, il sedano e l'aglio. Soffriggere per circa 5 minuti finché le verdure non saranno tenere.

Aggiungere la quinoa e mescolare bene per farla tostare leggermente.

Versare il brodo vegetale e portare a ebollizione. Ridurre il fuoco e cuocere per circa 15 minuti.
