Method

Pulisci accuratamente le cozze sotto acqua fredda, eliminando residui e barbe. Scolale bene.

Trita finemente la cipolla, 1 spicchio di aglio e il prezzemolo fresco. Riserva il basilico a crudo per la finitura.

In una pentola larga, scalda 20 ml di olio a fuoco medio. Aggiungi il soffritto e cuoci per 2-3 minuti fino a quando diventa profumato, senza bruciarlo.

Versa la polpa di pomodoro, il brodo vegetale, sale e pepe. Porta a ebollizione e lascia sobbollire per 5 minuti.

Aggiungi le cozze sgusciate direttamente nel brodo caldo. Cuoci a fuoco vivace per 8-10 minuti, finché non si aprono completamente (se già sgusciate, bastano 6-7 minuti).

Nel frattempo, tosta le fette di pane integrale in forno a 180°C per 4-5 minuti fino a renderle croccanti. Strofinale leggermente con lo spicchio di aglio rimasto.

Versa la zuppa in ciotole profonde, guarnisci con il basilico fresco, un filo di olio extravergine crudo e pepe nero macinato al momento.
