Scaldare 1 cucchiaio di olio EVO in una pentola antiaderente a fuoco medio-alto. Rosolare il petto di pollo tagliato a striscioline per 2 minuti per lato, salare e pepare.

Aggiungere cipolla, peperone banana e aglio tritati finemente, cuocere 3 minuti fino a profumo.

Versare il brodo di pollo, i pomodori pelati schiacciati, il cumino e il peperoncino in polvere. Portare a ebollizione e ridurre il fuoco.

Aggiungere il mais (solo 60g) e cuocere a fuoco medio per 10 minuti fino a che il pollo sia completamente cotto.

Nel frattempo, cospargere il formaggio proteico grattugiato su carta da forno e cuocere in forno a 180°C per 8-10 minuti fino a croccantezza.
