Pulire gli asparagi eliminando la parte fibrosa dal gambo e lavarli accuratamente sotto acqua fredda.

Portare a ebollizione un pentolone d'acqua con sale e immergere gli asparagi per 4-5 minuti fino a renderli teneri ma ancora croccanti; scolarli e lasciarli raffreddare su carta assorbente.

In una ciotola mescolare pangrattato integrale, parmigiano grattugiato, semi di sesamo, paprica e pepe fino.

In un'altra ciotola sbattere leggermente gli albumi con un pizzico di sale fino a renderli leggermente schiumosi.

Asciugare bene gli asparagi con carta assorbente.

Immergere ogni asparago negli albumi, scuotendo l'eccesso, quindi passarlo nel pangrattato sessamato, premendo delicatamente affinché la miscela aderisca bene.

Disporre gli asparagi panati su una placca da forno rivestita di carta forno, distanziandoli leggermente.

Spruzzare leggermente con olio extravergine di oliva usando un nebulizzatore.

Infornare a 200°C per 12-15 minuti fino a quando la crosta diventa dorata e croccante.
