Preriscaldare il forno a 180°C e foderare uno stampo rotondo (20 cm di diametro) con carta forno.

In una ciotola, montare le uova intere con lo zucchero di canna e la vaniglia per circa 8-10 minuti, fino a ottenere un composto pallido e spumoso.

Setacciare la farina integrale con il sale e incorporarla delicatamente al composto di uova con un movimento dal basso verso l'alto, usando una spatola.

Versare l'impasto nello stampo preparato e livellare la superficie.

Cuocere in forno per 10-12 minuti: la torta deve essere dorata e asciutta al test dello stecchino.

Estrarre dal forno e lasciare raffreddare 5 minuti nello stampo, quindi sformare su una gratella.

Una volta completamente fredda, spezzettare la torta in pezzi piccoli e tritare finemente con le mani o con un mixer.
