Method

Preriscalda il forno a 200°C. Prepara una pirofila da forno (28x20 cm) e rivestila leggermente con 5 ml di olio.

In una padella a fuoco medio-alto, soffrigi la cipolla con 8 ml di olio per 3 minuti fino a doratura leggera. Aggiungi l'aglio e cuoci per 30 secondi.

Unisci le zucchine e cuoci 4 minuti mescolando, quindi disponi il soffritto sul fondo della pirofila.

Asciuga i filetti di baccalà con carta assorbente e posizionali sui vegetali. Condisci con un pizzico di sale e pepe.

In una piccola pentola, riscalda la polpa di pomodoro con i rimanenti 12 ml di olio. Aggiungi capperi, olive, origano e un pizzico di sale. Porta a ebollizione e lascia sfumare 3 minuti.

Distribuisci il pangrattato integrale sui filetti e irriga delicatamente con la salsa di pomodoro.

Inforna per 25-28 minuti fino a quando il baccalà si sfoglia facilmente con una forchetta.
