Method

Preriscalda il forno a 200°C. Poni la melanzana intera su una teglia e cuoci per 25 minuti, girandola a metà cottura, fino a che la pelle non risulti ben carbonizzata.

Rimuovi la melanzana dal forno e lasciala raffreddare in un piatto coperto per circa 5 minuti. Successivamente, estrai la pelle e taglia la polpa a cubetti.

In una padella antiaderente, scalda l'olio d'oliva a fuoco medio e aggiungi la cipolla tritata, rosolando per 4 minuti fino a renderla trasparente.

Aggiungi i pomodori a cubetti e la melanzana. Condisci con peperoncino, sale e pepe, quindi cuoci per 7 minuti mescolando bene.

Unisci le proteine in polvere e un po' d'acqua (circa 30 ml) per ottenere una consistenza cremosa, mescolando fino ad amalgamare il tutto.

Fai cuocere per ulteriori 3-5 minuti e completa con coriandolo fresco tritato prima di servire caldo.
