Grattugiare il rafano fresco (20g) direttamente oppure triturarlo finemente con un coltello.

Frullare le barbabietole in un mixer manuale fino a purea omogenea; drenare leggermente il liquido in eccesso.

Mescolare la purea di barbabietole con il rafano grattugiato, 80g di ricotta magra e 60g di yogurt greco naturale 0%.

Condire con sale e pepe nero macinato fresco; aggiungere 5ml di aceto di mele per acidità.
