In una padella antiaderente, tostare a fuoco medio i semi di cumino e il chiodo di garofano per circa 2 minuti, finché non sprigionano il loro aroma, poi tritarli finemente.

Idratare il chile guajillo in 80 ml di acqua calda per 15 minuti, quindi frullarlo con i cumini tostati, la paprika affumicata, la cipolla, l'aglio, l'origano, il timo, l'aceto di mele e il succo di lime fino a ottenere una pasta liscia.

Marinare il petto di pollo nella pasta per almeno 30 minuti, preferibilmente in frigorifero per un sapore più intenso.

Scaldare l'olio in una padella antiaderente e cuocere il pollo a fuoco medio-basso per circa 20 minuti, coprendo con un coperchio e girando a metà cottura.
