Pulire gli asparagi eliminando la parte bianca più dura dal fondo e lavare bene sotto acqua corrente. Tagliarli a pezzi di circa 3-4 cm.

Portare a ebollizione una pentola con acqua leggermente salata e cuocere gli asparagi per 12-15 minuti finché non sono teneri. Scolarli bene e far raffreddare.

Nel frattempo, separare delicatamente le foglie di radicchio rosso pulendole con carta assorbente umida, mantenendole intere e crucci per il contenimento.

In una ciotola, unire gli asparagi raffreddati, la ricotta magra, il salmone affumicato tagliato a pezzetti e il succo di limone. Mescolare energicamente con una forchetta fino a ottenere una crema omogenea ma con piccoli frammenti riconoscibili.

Assaggiare, aggiustare di sale e pepe nero.

Disporre le foglie di radicchio su un piatto da portata e riempire generosamente il centro di ogni foglia con il composto di asparagi e salmone.

Completare ogni barchetta con un filo di olio extravergine di oliva (1 ml per porzione), qualche grano di pepe nero fresco e un pizzico di erba cipollina tritata.
