Method

In una ciotola, mescola l'acqua tiepida con il lievito e lascia riposare per circa 5 minuti finché non diventa leggermente schiumoso.

In un'altra ciotola, combina le farine di avena e mandorle, il sale e l'eritritolo. Aggiungi il composto di lievito e l'olio d'oliva e mescola fino a ottenere un impasto omogeneo.

Trasferisci l'impasto su un piano di lavoro e impasta per circa 5-7 minuti, fino a quando non risulta elastico e liscio.

Metti l'impasto in una ciotola leggermente unta e copri con un panno umido. Lascia lievitare in un luogo caldo per circa 30-40 minuti, fino al raddoppio del volume.

Preriscalda il forno a 180°C e prepara una teglia per pane rivestendola di carta da forno.

Dopo la lievitazione, sgonfia l'impasto e trasferiscilo sulla superficie di lavoro. Forma una pagnotta e posizionala nella teglia preparata. Copri di nuovo con un panno e lascia lievitare per altri 20 minuti.

Cuoci in forno preriscaldato per circa 25-30 minuti, fino a doratura.
