Method

In un pentolino, scalda il latte scremato e l'eritritolo fino a sfiorare l'ebollizione, mescolando per sciogliere bene il dolcificante. Togli dal fuoco.

In una ciotola, mescola l'amido di mais e un pizzico di sale. Aggiungi le uova e la vaniglia, sbattendo bene.

Versa un po' di latte caldo nel composto di uova per temperare, poi unisci il tutto al pentolino con il latte caldo. Riporta sul fuoco e cuoci fino a quando la crema si addensa. Lascia raffreddare.

Preriscalda il forno a 180°C. Imburra e infarina una tortiera di 22 cm.

In una ciotola, sbatti le uova con l'eritritolo fino a ottenere un composto chiaro e spumoso.

Setaccia la farina d'avena e il lievito e incorpora delicatamente nel composto di uova.

Versa metà dell'impasto nella tortiera, quindi aggiungi la crema raffreddata, ricoprendo con il resto dell'impasto.

Cuoci in forno per 30-40 minuti, fino a doratura.
