Method

Mescolare 15g di farina di mandorle, 8g di amido di tapioca, 1 tuorlo d'uovo, 5g di pasta di mandorle sciolta, 1 goccia di vaniglia e un pizzico di sale fino a ottenere un impasto omogeneo.

Montare 2 albumi d'uovo a picchi morbidi, aggiungere lentamente 8g di eritritolo e montare fino a picchi fermi e lucidi.

Incorporare delicatamente i bianchi all'impasto con il tuorlo piegando dolcemente.

Su carta forno leggermente unta, stendere un sottilissimo strato di impasto (circa 2-3mm) e cuocere sotto il grill del forno a 200°C per 60-90 secondi fino a doratura leggera.

Ripetere l'operazione 6-8 volte fino a esaurimento impasto, lasciando raffreddare leggermente ogni strato.

Una volta fredda completamente, spennellare entrambi i lati con 8g di cioccolato fondente (85%) sciolto in 0.5g di olio di cocco e far solidificare in frigorifero.
