Method

In una padella antiaderente, rosola 40g di pancetta a dadini finché croccante; mettere da parte su carta assorbente.

Nello stesso grasso, dorare 150g di manzo tagliato a cubetti per 3-4 minuti, quindi trasferire in una pentola media.

Aggiungere alla pentola: 120ml di brodo di manzo, 40g cipolla affettata, 35g carota tagliata, 5g pasta di pomodoro, 1 spicchio d'aglio tritato, 0,3g timo secco, sale, pepe e 1 foglia d'alloro. Coprire e cuocere a fuoco dolce per 1 ora.

Aggiungere 80g di funghi champignon affettati e 60ml di vino rosso Burgundy (o brodo), mescolare bene. Continuare la cottura per 15 minuti.

Stemperare 7g di amido di mais con 30ml d'acqua fredda, versare lentamente nel brodo rimescolando costantemente fino ad addensamento (3-5 minuti).

Eliminare la foglia d'alloro, aggiustare di sale e pepe. Guarnire con la pancetta croccante e prezzemolo fresco tritato.
