Preriscalda il forno a 180°C e foderai due teglie con carta forno.

Togli le bucce dalle banane con cura, lavale bene sotto acqua fredda e tagliale a pezzi di circa 2 cm.

In un frullatore, tritura finemente le nocciole fino a ottenere una farina grossa; trasferiscile in una ciotola.

Nello stesso frullatore, aggiungi le bucce di banana, il miele e l'olio di cocco, frullando fino a ottenere un composto omogeneo e leggermente cremoso (circa 1 minuto).

In una terrina, versa il composto di banana, le nocciole macinate, gli albumi leggermente sbattuti, la farina d'avena, la proteina in polvere, il bicarbonato, la canella e il sale.

Mescola con un cucchiaio di legno fino a incorporare bene tutti gli ingredienti.

Aggiungi le gocce di cioccolato e mescola delicatamente.

Con due cucchiaini umidi, preleva porzioni di pasta (circa 12-15 g cadauna) e disponile sulle teglie, distanziandole di 4 cm.

Cuoci in forno a 180°C per 11-13 minuti, fino a doratura leggera dei biscotti.

Estrai dal forno e lascia raffreddare sulla teglia per 5 minuti, poi trasferisci su una gratella.
