Method

Preriscaldare il forno a 180°C e foderare una teglia con carta da forno.

In una ciotola, mescolare il farro integrale macinato con le proteine in polvere, l'amido di riso, il lievito per dolci e il sale.

In un'altra ciotola, montare leggermente gli albumi con una frusta manuale, quindi aggiungere lo yogurt greco, il miele e la vaniglia grattuggiata, mescolando delicatamente.

Unire il composto secco al composto bagnato, incorporando l'olio di cocco fuso. Mescolare fino a ottenere un impasto coesivo ma non appiccicaticcio.

Trasferire l'impasto su un foglio di carta da forno e formare 24 piccoli biscotti tondi (circa 4-5 cm di diametro), distanziandoli di 2 cm l'uno dall'altro.

Infornare a 180°C per 10-12 minuti, fino a quando i biscotti risulteranno leggermente dorati ai bordi.
