Tritare finemente le nocciole tostate, riservandone un cucchiaio per la decorazione.

In una ciotola, amalgamare burro chiarificato e zucchero di cocco con una frusta fino a ottenere un composto cremoso.

Aggiungere l'uovo e l'estratto di vaniglia, continuare a mescolare energicamente.

In un'altra ciotola, setacciare insieme farina integrale, proteine in polvere, cacao, lievito e sale.

Unire gli ingredienti secchi a quelli bagnati, mescolare delicatamente fino a formare un impasto omogeneo. Aggiungere le nocciole tritate.

Avvolgere l'impasto nella pellicola e refrigerare per 40 minuti.

Cuocere per 11-13 minuti fino a quando i bordi risultano dorati e il centro appena sodo al tatto.
