Method

In una padella antiaderente, tostare i semi di cumino a fuoco medio per circa 1 minuto, finché non sprigionano il loro aroma. Trasferire in una ciotola.

Aggiungere alla ciotola il succo d'arancia, il succo di lime, l'origano e il pepe nero; mescolare bene per ottenere una marinata.

Inserire la bistecca in un sacchetto richiudibile, versare la marinata e sigillare. Massaggiare per distribuire bene i sapori e lasciare marinare in frigorifero per 30 minuti.

Riscaldare una griglia a fuoco medio-alto e spennellare leggermente la griglia con olio extravergine d'oliva.

Togliere la bistecca dalla marinata, eliminare l'eccesso e grigliare per circa 6-7 minuti per lato, fino a raggiungere una temperatura interna di 65°C.

Lasciare riposare la bistecca per 3 minuti prima di servire.
