Preriscalda il forno a 180°C e rivesti un pirottino da 150ml con carta da forno.

In una ciotola, mescola il latte di mandorla, le proteine in polvere, l'uovo e l'olio di cocco fuso fino ad ottenere un composto omogeneo.

Aggiungi la farina di avena, il lievito e un pizzico di sale, mescolando bene fino a completa incorporazione.

Versa l'impasto nel pirottino e cuoci in forno per circa 15 minuti, finché non risulterà dorato e uno stuzzicadenti inserito al centro uscirà asciutto.

Lascia raffreddare per qualche minuto, poi servi tiepido per gustare al meglio la sua morbidezza.
