Method

Inizia cuocendo il petto di pollo in un litro di brodo vegetale leggero fino a quando non è ben cotto, circa 20-30 minuti. Rimuovi il pollo e conserva il brodo.

Nella stessa pentola, aggiungi l'olio d'oliva, le cipolle tritate e le carote tagliate a rondelle. Soffriggi per circa 5 minuti fino a quando le cipolle diventano trasparenti.

Aggiungi le barbabietole a cubetti, il cavolo cappuccio tagliato finemente, l'aceto di mele, il pepe nero in grani, il cumino e il prezzemolo. Mescola bene.

Versa il brodo vegetale nella pentola, porta a ebollizione e poi abbassa il fuoco. Copri e lascia sobbollire per circa 40 minuti, fino a quando tutte le verdure sono tenere.

Nel frattempo, taglia il pollo a pezzetti e aggiungilo alla pentola negli ultimi 10 minuti di cottura.

Servi caldo, eventualmente guarnito con un po' di prezzemolo fresco tritato.
