In un pentolino a fuoco medio, versare il latte evaporato e aggiungere il cacao magro setacciato, mescolando con una frusta fino a eliminare i grumi e ottenere una crema liscia.

Aggiungere il burro chiarificato e continuare a mescolare per 8-10 minuti, finché il composto non si addenserà e avrà una consistenza omogenea.

Togliere dal fuoco e incorporare le proteine in polvere e l'eritritolo, mescolando bene fino a ridistribuire i grumi.
