Method

In una ciotola, sciogli il lievito di birra in 50 ml di acqua tiepida e lascia riposare per 10 minuti fino a quando non diventa schiumoso.

In una grande ciotola, unisci la farina integrale, le proteine in polvere, lo zucchero di cocco e il sale.

Fai un buco al centro delle polveri e aggiungi le uova, lo yogurt greco e il lievito. Mescola bene fino a formare un impasto omogeneo.

Trasferisci l'impasto su una superficie infarinata e impasta per circa 5 minuti fino a ottenere una consistenza liscia.

Aggiungi l'olio d'oliva all'impasto e continua a impastare per altri 5 minuti.

Metti l'impasto in una ciotola leggermente unta e copri con un canovaccio. Lascialo lievitare in un luogo caldo per circa 1 ora, o fino al raddoppio.

Riprendi l'impasto e sgonfialo delicatamente. Dividilo in 8 porzioni e forma delle palline.

Disponi le palline in una teglia rivestita di carta forno e lasciale lievitare nuovamente per 30 minuti.

Preriscalda il forno a 180°C.

Cuoci le brioche per circa 25 minuti o fino a doratura. Lascia raffreddare su una griglia prima di servire.
