Method

Pulire il calamaro, rimuovendo la sacca e la pelle, e sciacquarlo sotto acqua fredda. Asciugare con carta assorbente.

Tritare finemente i filetti di merluzzo e i gamberetti, quindi mescolarli in una ciotola con la quinoa cotta, il prezzemolo, l'aglio, sale e pepe.

Riempire il calamaro con il composto, lasciando un centimetro libero in cima, e chiudere l'apertura con uno stuzzicadenti.

Frullare il pomodoro e la cipolla con l'olio, la paprika, il succo di limone, sale e pepe fino a ottenere una salsa liscia.

Versare la salsa in una pirofila, posizionare il calamaro ripieno e coprire con carta alluminio.

Cuocere in forno preriscaldato a 180°C per 30 minuti, poi rimuovere la copertura e continuare a cuocere per altri 10 minuti.

Servire caldo, guarnito con spicchi di limone.
