Preriscaldare il forno a 180°C. Foderare una placca con carta forno.

In una ciotola, mescolare farina, cacao, eritritolo e sale. Aggiungere burro ammorbidito, uovo e vaniglia, impastare fino a ottenere un composto omogeneo e compatto.

Stendere l'impasto tra due fogli di carta forno fino a 2-3 mm di spessore. Ricavare 16 rettangoli di 8 x 10 cm.

Spruzzare leggermente i cilindri per cannoli con olio di cocco. Avvolgere ogni rettangolo di pasta intorno ai cilindri.

Disporre sulla placca e cuocere per 12 minuti a 180°C, fino a quando la pasta risulta croccante e lievemente scura.

Sfornare e lasciar raffreddare completamente prima di estrarre delicatamente i cannoli dai cilindri.

In una ciotola, mescolare ricotta, proteine in polvere, eritritolo e scorza di limone fino a ottenere una crema liscia.

Incorporare le nocciole tritate e il cioccolato fondente grattugiato.

Trasferire la crema in una tasca da pasticcere e farcire i cannoli con movimenti decisi.
