Taglia le carote a bastoncini e lessale in acqua bollente salata per circa 5 minuti fino a renderle croccanti. Scola e metti da parte.

In una padella antiaderente, scalda l'olio extravergine d'oliva e fai rosolare la cipolla rossa tritata finemente per 3-4 minuti fino a quando diventa trasparente.

Aggiungi il pollo tritato e cuoci per circa 5 minuti, mescolando, fino a quando non è ben cotto e sbriciolato.
