Sciacqua i ceci sotto acqua fredda e mettili in una pentola capiente. Ricopri completamente con acqua fredda e lascia in ammollo per almeno 8 ore o overnight.

Il giorno dopo, scola i ceci e risciacquali bene.

In una pentola a pressione o pentola tradizionale, versa il brodo vegetale e aggiungi la carota, il sedano, la cipolla, l'aglio, l'alloro e il rosmarino.

Accendi il fuoco a fiamma media e porta il brodo a bollore, poi aggiungi i ceci scolati.

Se usi una pentola a pressione, chiudi il coperchio e cuoci a fuoco moderato per 1 ora e 30 minuti dopo il raggiungimento della pressione; se usi una pentola tradizionale, copri e lascia sobbollire dolcemente per 2-2.5 ore, finché i ceci non sono tenerissimi.
