In un pentolino, scalda il latte di mandorla a fuoco medio e aggiungi le spezie (cannella, cardamomo, chiodi di garofano, noce moscata) per 5 minuti.

In una ciotola, sbatti il tuorlo d'uovo con le proteine in polvere e l'eritritolo fino a ottenere un composto omogeneo.

Versa lentamente il latte aromatico nella miscela di uovo, mescolando continuamente per evitare che l'uovo si cuocia.

Aggiungi lo yogurt greco e mescola fino a ottenere un composto liscio.

Versa il composto in una ciotola da forno e cuoci a bagnomaria a 160°C per 20 minuti, fino a quando il centro è leggermente tremolante.
